How I learned that I am Gluten Intolerant

I have went to Nature Path the last year, for over a year for my acid reflux/hietal hernia. The ladies there are very caring and fun to be around. I loved it there. They have helped me out allot. I had gotten the Hietal Hernia Surgery in August 2009, it has helped allot. I still have all my Food Allergies though.

I always feel better as long as I follow the Dr's advise.

First she told be to go on an Anti-Inflammatory Diet. The book is called "The Anit-Inflammation Diet and Recipe Book" Protect yourself and your family from Heart Disease, Arthritis, Diabetes, Allergies and More. by Jessica K. Black, N.D. I got this book from the Nature Path, but you can get anywhere. My nature path has also put me on natural supplements. And she told me to use organic foods. I have lost lots of weight following this diet plan. It's mostly vegetable, some meats and some fruit. No junk food. No sugar or wheat. Dr. has me doing a castor oil pack. You put castor oil on a special cotton cloth, then you lay the towel on your stomach then plastic bag, then a towel, lastly a heating pad. Do that for about an hour. It is really soothing. It is a form of detox.

Before I followed this diet, I was following "The Acid-Alkaline Diet" for Optimum Health Restore your health by creating balance in your diet.
This book talks about eating alkaline foods and drinking alkaline water and staying away form acidy foods. Both of these books are very similar food wise.

It helps to rid allergies and other sensivtivites, like food. Read up on it. It has helped me allot.

I have also followed the advise of  a book called "Prescription for Nutritional Healing"A practical A-Z Reference to drug-free remedies using Vitamins, Minerals, Herbs and food supplements. By Phyllis A. Balch, CNC and James F. Balch, M.D.

















My nature path also did a food sensitivity test on me and discovered that I have several food sensitivities. Especially to: Dairy, Caffeine, Chocolate, Sugars, Wheat (and all Gluten's), Tomatoes, Potatoes and Corn.

I went to a Gluten-Free Baking Class held at my Nature Path's office. Lead by Lynn Strickland. Lynn owns Strickland Mix Company.
I bought one of her Strickland's Mix for Gluten-Free Sugar-Free Baking Mix.
Lynn gave us some very yummy treats that she had baked, they were Gluten-Free and Sugar-Free.

Breakfast Ideas
Low Carbohydrate, Low Glycemic Index Ideas

1) Apple slices dipped in almond butter
2) Apple with almond cheese slices (almond cheese can be found at Fred Meyers, Whole Foods or New Seasons)
3) Grainless Apple Pancakes
4) Cleanse shakes, Purification Shake Recipes or Breakfast in a Blender
5) Green Mix Protein Shake, Mix 1 scoop Greens First with 1 scoop Whey Pro Complete or 2 scoops Cleanse Shake.
6) Homemade Probiotics Yogurt

Gluten-Free Baking Tips

1)Bake thoroughly
2)Cool Completely before storing
3)Keep equipment and work surfaces clean
4)Use parchment paper for sticky products
5)Xanthan Gum is worth the purchase; a little goes a long way!
6)Yeast Breads:
Need only one rising in the pan they will bake in; also use less flour, soupy batter.
Igredients should be room temperature except for water which should be lukewarm, 110 degrees or less; too hot it kills the yeast, too cold the yeast won't activate.
Adding extra protein in the form of eggs, egg substitutes, or milk solids help the yeast work in yeast breads as does cider vinegar.
7) Replacing sugar with honey, use about half the amount of honey; consider extra flour to balance liquid characteristic of honey.
8)Honey is a natural preservative and baked goods containing it will last longer before turning moldy.
9) Gluten-Free baked goods freeze well.
10) Mixes can be worth the investment for time saved and a successful finished product.
11) Flour blends give a better result.
12) Some people taste the "bean" in bean flours.
13) "Plan your work and work your plan"
14) Converting recipes: Use a blend of gluten-free flours to replace wheat flour, and 1/2 tsp. xanthan gum for one batch of muffins, cookies, quick breads; and extra leavening like aluminum-free baking powder or soda up to 1 tsp. per batch of baked goods.
15) Bake at a lower temperature for a longer time to ensure shelf life.
16) Store products in the refrigerator to ensure shelf life.
17) Label storage containers in a consistent but different manner than products containing gluten.

Gluten-Free Recipes Continuted, Continuted

Corn Bread
1 cup rice or soy milk
1 egg
1/4 cup oil
1/4 cup honey or maple syrup
1 cup cornmeal
1 cup rice flour
2 tsp. baking powder
1 tsp. soda
1/2 tsp. xanthan gum
1/4 tsp. salt
Mix and pour into greased muffin tins or 8" square pan. Bake 25 minutes at 350 degrees.

Cornbread Casserole
In 9x13 pan, Layer:
1 can or 2 cups cooked beans (black, red or pinto)
1 28 oz. can diced tomatoes
1 or 2 diced zuccinis
2 cup corn, fresh or frozen that has been thawed
Diced green or red peppers, mushrooms, or onions to taste
Sprinkle with chilli powder or Italian herbs
Cover with one batch of cornbread batter, recipe above
Bake 30 minutes at 350 degrees or until cornbread is done.

Gingerbread
Use cornbread recipe but:
substituted 1/4 cup molasses for honey
2 tsp. ginger
1 tsp. cinnamon
1/4 tsp. cloves
Decrease cornmeal 1/2 and 1/2 cup more flour

Pie Crust
3/4 cup rice flour
1/3 cup butter
2 Tbsp. cold water
1/2 tsp. xanthan gum
1 tsp. honey
1/4 tsp. sea salt
Cut butter into dry ingredients. Add honey, then water. Roll between 2 sheets of foil. For Almond crust and 1/3 cup chopped Almonds

Pie Crust II
1 1/2 cup gluten free flour
1/3 cup corn starch
1 tsp. xanthan gum
1/2 cup butter
1 egg
1 tsp. vanilla
Mix, then break into 2 pieces and chill.

Crumble Topping
3/4 cup gluten-free flour
1/3 cup butter
1/2 tsp. nutmeg
3/4 cup cup brown sugar or 1/4 cup honey
Mix all into crumbs.

Basic Pie
One crust in pie plate, fill with 3 cups sliced apples or berries, sprinkle with 2 Tbsp. corn or arrowroot starch, 1 tsp. cinnamon and 4 Tbsp. honey. Cover with another 2-3 sliced apples or berries. Top with a second crust or crumble topping. Bake at 350 degrees for 45 minutes or until browned.

Gluten-Free Recipes Continuted

Apple Muffins
1 Cup Millet Flour
1 tsp. cinnamon
1 cup brown rice flour
1 egg
1/2 cup honey
1 green apple peeled and chopped
1 tsp. soda
1/2 tsp. nutmeg
2 Tbsp. tapioca flour
1/4 cup oil
1/2 cup rice milk
Mix and spoon into greased muffin tins. Bake 25 minutes at 350 degrees.

Breakfast Muffins
1/2 cup garbanzo flour
1 cup brown rice flour
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. sea salt
1/4 cup oil
1/4 cup honey
1 carrot grated
1/2 cup raisins or dried cranberries
1 green apple peeled & chopped
1/2 cup millet flour
1/2 tsp. xanthan gum
1/2 tsp. nutmeg
1 tsp. baking powder
1 egg
1/2 cup applesauce
3/4 cup rice milk
1/2 cup chopped pecans
Mix and spoon into greased muffin tins. Bake at 325 degrees for 20-25 minutes.

Baking Powder
2 Tbsp. baking powder = 1 1/2 tsp. baking soda + 3 tsp. cream of tarter

Herb Dressing
1/2 cup olive oil
2 Tbsp. balsamic vinegar
1/4 tsp. thyme
1/4 tsp. marjarom
1/4 tsp. tarragon
1/2 tsp. basil
Mix all and let stand at least one hour before serving.

Honey-Buckwheat Yeast Bread
1 1/2 cup warm water
1 Tbsp. yeast
1/4 cup honey
1 tsp. cider vinegar
1 Tbsp. olive oil
1 1/4 cup Strickland's Gluten-Free Baking Mix
1 cup buckwheat flour
1/2 cup raw sunflower seeds, shelled
2 beaten eggs
Dissolve yeast in water (not over 110 degrees), and honey. Let stand 10 minutes; should bubble if yeast is good. If no bubbles, start over with fresh yeast. Add liquid ingredients, then stir in dry ingredients. Pour batter into greased loaf pan. Let rise 45 minutes. Place in oven, set heat to 350 degrees and bake 45-55 minutes. Let cool out of pan 10 minutes before slicing.

Gluten-Free Recipes

Chocolate Cookies
1/2 cup butter
1/4 cup baking cocoa
1/2 cup honey
1 egg
1/2 cup chopped toasted almonds
3/4 cup millet flour
3/4 cup brown rice flour
1 tp. baking soda
1 cup unsweetened coconut
1/2 tsp. xanthan gum
Mix and spoon onto greased baking sheets. Bake 12-15 minutes at 350 degrees.

Mountain Cookies
1/2 cup butter
1/2 cup honey
1 tsp. vanilla
2/3 cup sorghum flour
1 tsp. soda
1/2 cup raw sunflower seeds
1/2 cup nut butter (almond)
1 egg
1 cup brown rice flour
1/3 cup tapioca flour
1 cup unsweetened coconut
1 cup raisins
Mix and spoon onto greased baking sheets. Bake 12-15 minutes at 350 degrees.

Candied Almonds
2 cups toasted almonds
1 tsp. cinnamon
4 Tbsp. honey
On a non-stick pan combine all and mix. Bake 15 minutes at 350 degrees. Cool, scrape off pan and store in air tight container.

Blueberry Muffins
2 Cups Strickland's Gluten-Free, Sugar-Free Baking Mix
1 Egg
1 tsp. cinnamon
1 tsp. vanilla
1 cup rice milk
1/4 cup oil
1/4 cup honey
2 cups blueberries
Mix all and spoon into greased muffin tins. Bake at 350 degrees for 20-25 minutes.
Pumpkin Muffins
1 cup brown rice flour
1/2 cup tapioca flour
1 cup millet flour
1 tsp. soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1/8 tsp. cloves
1/2 cup rice milk
1 cup pumpkin
1 egg
1 cup chopped nuts if desired
1 cup dried cranberries or raisins
Mix and bake in greased muffin tins 25-3o minutes at 350 degrees.
Banana Bars
1/2 cup butter
1 egg
1 tsp. vanilla
1 cup brown rice flour
1/2 cup sorghum flour
1/2 tsp. xanthan gum
1/2 cup pecans or walnuts chopped
1/2 cup honey
1/2 cup rice milk
2 ripe bananas mashed
1/2 cup millet flour
2 tsp. baking powder
1/2 tsp. salt
Mix in order and spread in a greased 9x13 pan. Bake at 350 degrees for 12-35 minutes or until browned and done in the center.

Creation Science

When I was a kid I had lots of questions about creation and where it fit in the bible, like "Where do the dinosaurs fit in the Bible? And what about the Flood?

My husband and I went to one of our first Creation Conference a few years ago. And boy did it open our eyes. It answered all my questions and more. The speaker at that conference was Ken Ham. He was a wonderful speaker. At the next conference the following year the speaker was Kent Hovind. He and Ken Ham just blew us away with the knowledge that they had about creation. I have a passion for Creation Science.

My Story of How My Son was Born.

Hi All,

I wanted to write about how Natural Progesterone Cream has helped me since I started using it in the year 2000 after I miscarried my first pregancy. My Husband and I were heart broken after waiting so long to have our own children.

So here is my story. (For Reference look-up

I did after I miscarried I did so much reasearch on Natural Progesteone Cream and why women miscarry. I did not want to loose another pregnacy.

I think my hormone imbalance started when I was in college then started up again shortly after my husband and I met at age 21. I had reglular periods until a month after my husband and I met, then in one month I had two periods then after that there were not more periods. I thought this was wierd. So I went to the local clinic and they gave me birth control drugs. Just want I didn't need. I wasn't ovulating so why the birth control? Then a couple of years later a doctor put me on a drug to keep my periods going. They told me if you don't have regular periods you can be at risk for cancer. Later I heard that drug which I cannot remember the name can cause cancer. I asked my doctor and he denied it of course.

When I was ready to have children. A year and half after we had been married. They doctors put me on fertiltiy drugs, nothing happended. Finally in 1999 a doctor put me on the right dosage for me to get pregnant. We were so thrilled. Then I miscarried.

A Pastor's Wife told me about Natural Progesterone Cream and told me to read Dr. Lee's Book. "What your Doctor may not tell you about Menopause" And all the answers were right there. Why I wasn't ovulating and getting pregnant and and why I wasnt'g having my periods regularly. I had Estrogen Domiance. According to Dr. Lee Natural Progesterone Cream has been around since the 1930's. Dr. Lee has had his patience's using it for over 30 years.

I went to a hormone balance seminar and further learned why allot of women have estrogen dominance.I told my doctor about this and he denied that it would work to help me get pregnant and said that he was my doctor and he knew what was best for me. And told me let's try the fertility drugs again and next time I get pregnant he would put me on Progesterone Suppositories to keep the pregancy. Hello, what does that tell me that we need progesteone to keep pregancies or we will micarry. Anyways I was so mad at that doctor for not giving me the progestone to keep my pregnancy in the first place and he would not listen to me that a natural product could help, that I stopped seeing him for several years.

When I started using the cream I felt so much better, I was sleeping better at night. I have had a reglular period for 8 years now. Praise the Lord. And I have not had to take that drug with the side effects to keep my period going.

I tried using the cream like Doctor Lee suggested to get pregnant, which has helped allot of women. It is suggested in order to get pregnant instead of using the cream the regular 2 weeks. Use the cream for on days 7-28 for 6 months then go back to using it for days 14-28 and then you should ovulate. Then when you get pregnant you use 1/2 tsp. twice or even three times a day. And then to stop using the cream a week or two before the baby is to be born. I believe because of my weight issues that I have for years stopped me from getting pregnant, which is also mentioned in the book. (You rub the cream onto your skin alternating areas.)

So I went back to that doctor and told him that the cream was working for me, It just hasn't helped me to get pregnant. So he put me back on the fertility drugs and in four months I was pregnant again. Yippee. The doctor talked about putting me on some Progesterone drugs which I didn't want to do. So what I did instead is what Dr. Lee MD told me in his book to to double up on the Natural Progestone Cream. You see Progesterone is suppose to keep rising when you are pregnant. If is drops you miscarry like I did. Anyways I found a Natural Progesteone Cream that I liked and I doubled the amount of cream I was using and I kept the pregnacy. Now we have a beautiful 2 1/2 year old Named Zackary. Who is the most pleasant smart baby.

A few of the things that Dr. Lee says that when using the cream when pregnant it produces bigger, smarter, calmer, healthier babies and that is definatley what our son is. They also clamied it helped for Post Partum Depression. But I still went threw that after our son was born. I couldn't wait to get back on the cream. After a month after my son was born I started back on my regular dosage of 1/4 tsp. on days 14-28 of my cycle and it made me feel so much better. It still took a few months for the depression to go away but it did eventually. I have read lots of books on natural products and they all say that natural products take longer to work, so you just have to be patient, but it is so worth the wait and not vertually no side effects and is healthier. (Any side effects would be the initial getting use to the cream and making sure you use it the way it is suggested.) You use the cream according if you are in the premenopuse stage or the menopause stage of your life. Women in menopause it is suggested using it days 7-28 in your monthly cycle. Premenopause it is days 14-28. 1/4 tsp. twice a day. There are much more issues that Natural Progesteone Cream can help with, such as going into menopause and dealing with hot flashes. Trying to get pregnant or PMS, Irregular Periods, and Ovarian csyts. etc. Dr. Lee even goes as far as to say that using the cream will protect against Breast Cancer. Dr. Lee has written another book called "What your doctor may not tell you about Breast Cancer" In Dr. Lee's book there is a list of Estrogen Domance symtems. See if there are any that you have.

While in the class our instructor gave us paper on "Cytotec" also known as "Misoprostol" It is a ulcer drug that doctors have been using to induce labor. My doctor wanted to use it on me and I said no way. After what I read on the internet about it and what I saw on the news about it. The news report said that a young lady and her unborn child had died from using it because her doctor used it to induce labor.

Misoprostol is sometimes used to decrease blood loss after delivery of a baby. These uses are not approved by the FDA. No company has sent the FDA scientific proof that misoprostol is safe and effective for these uses. There can be serious side effects, including a torn uterus (womb), when misoprostol is used for labor and delivery. A torn uterus may result in severe bleeding, having the uterus removed (hysterectomy), and death of the mother or baby. These side effects are more likely in women who have had previous uterine surgery, a previous Cesarean delivery (C-section), or several previous births.
